Tomato Sauce with Fresh Tomatoes

Tomato Sauce takes on a fresher, more vibrant flavor when you make it with juicy garden tomatoes. We are so excited to share this recipe with you! We promise, you will never go back to store-bought sauce again (at least not when tomatoes are in season). It’s time to plant them now. Enjoy!

Ingredients:

  • 2 kg of fresh garden tomatoes
  • 2-3 cloves of peeled and chopped garlic
  • 1/4 cup of olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon of onion salt
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of cayenne pepper
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Wash the fresh tomatoes and cut them into small pieces.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped garlic and sauté for 1-2 minutes until golden.
  4. Add the tomatoes to the pot and increase the heat to medium-high.
  5. Add the onion salt, dried thyme, paprika, and cayenne pepper. Mix well.
  6. Cook the tomatoes for about 20 minutes, stirring occasionally.
  7. Mash the tomatoes with a fork or immersion blender until the sauce reaches a desired consistency.
  8. Simmer the sauce for an additional 10 minutes.
  9. Season with salt and freshly ground black pepper, to taste.
  10. Serve the sauce hot over pasta or other dishes of your choice.
  11. Garnish with fresh basil leaves if desired.

Here’s the recipe to go along with it:

Ingredients:

  • 4 cups of freshly harvested apples, peeled, cored, and sliced
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 egg
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Arrange the sliced apples evenly in the bottom of the dish.
  3. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  4. Add the egg, melted butter, and vanilla extract to the dry mixture, and stir until it forms a crumbly dough.
  5. Sprinkle the dough mixture over the apples in the dish.
  6. Bake in the preheated oven for 40-45 minutes or until the topping is golden brown and the apples are tender.
  7. Allow it to cool slightly before serving. Optionally, serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
